Ingredients
4 boneless skinless chicken breasts
1/3 cup olive oil or avocado oil, plus 1 tablespoon
1 tablespoon lemon zest
1/3 cup fresh lemon juice
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
2 teaspoon dried basil
2 large garlic gloves, minced
1 teaspoon salt
1/2 teaspoon black pepper
Chopped fresh or dried parsley, for serving
Directions
In a medium size bowl, whisk together add 1/3 cup olive or avocado oil, lemon zest, basil, thyme, rosemary, basil, garlic, salt and pepper.
Add the chicken to the bowl and toss so all of the chicken is covered completely with the olive oil mixture. Cover the bowl with plastic wrap and place in refrigerator. Toss the chicken halfway through the marinating time.
In a medium size skillet add 1 tablespoon olive or avocado oil on medium high heat. Place chicken and cook chicken about 4 minutes per side, or until the chicken reads 160 degrees with an instant read thermometer.
Let the chicken rest, garnish with fresh or dried parsley and lemon and serve immediately.
Tip
When using dried herbs, measure the amount for your recipe. Add the herbs to the palm your hand. Rub the herbs in between your hands to “wake up” the herbs. Then add to your recipe. This will bring out more of the flavors.
